Healthy Honey Muesli Bars
I Originally got this recipe from Essential Baby many moons ago, So no longer know who it came from.
Ingredients:
50g Butter
1/2 C Raw sugar
1/4 Honey
1 wheetbix (crushed)
1/2 C Sultanas or Mixed Fruit
1/2 C rolled oats
1/2 C S.R. Flour
Method:
Preheat oven to 170C Line a 20cm square tin with baking paper.
Melt butter, sugar & honey over a medium heat, stir until smooth and sugar is dissolved. Set aside to cool slightly.
Combine wheetbix, oats, flour and sultana's in a large bowl. Add butter mix and stir until combined.
Press into tin, bake for 15-20 mins or until golden.
Set aside in tin to cool completely
Remove from tin and cut into desired size.
Store in a airtight container. They will last at least a week, but they get gobbled up well before that here!
**Notes:
You can reduce the sugar by about half if you like.
The longer you simmer the butter/sugar/honey the harder the muesli bar will be. If you simmer for a shorter time it will be chewy.
Please make sure this is completely cool before cutting otherwise it's likely to crumble.
I sometimes take out a little of each of the dry ingredients (about a table spoon of each) and then add about that same amount of coconut in to the mix.
I often double the recipe!
